Mao Xie Oolong “Hairy Crab” - Oolong Tea
If the name doesn’t prompt you to do a double-take, the thick, creamy texture is bound to. Fine silvery hairs on the underside of each leaf bring to mind the hairy claws of the mitten-crab, a seasonal delicacy in China’s Fujian province. Our tip is that this crisp and flavourful tea only improves with a second or third steeping, making it ideal for long overdue catch-ups. The lightly rolled leaves have been hand plucked, withered in sunlight, bruised, rested and pan roasted to achieve a balance of bitterness, astringency and high aroma.
Food Pairing
A pleasing, pale golden, perfumed liquor with a buttery mouth feel that goes beautifully with seafood and dim sum. Springtime-floral fragrance, a hint of magnolia and melon. Crisp citrus and green bean flavours with a satisfyingly long finish.
